Join me as I blog my way through Dr. Furhman’s Eat to Live plan again, (yup I did this before and lost over 21 pounds)! My goal is to reach my ideal weight by doing the 6 week Eat to Live plan by Dr. Fuhrman until I reach that magic number! I will be posting the meals I eat with the goal of getting an archive of 100 days of Nutritarian meals on the blog! Breakfast: 1/2 rolled oats cooked in water, topped with apple and no sugar added cranberry apple “jelly” (simply add 1 diced apple and 1/2 cup whole fresh cranberries to a sauce pot with 1 cup water and 1 tbsp lemon juice, cook over medium heat until a jelly-like consistency is reached; chill in the refrigerator overnight if possible). Sprinkle of raw chia seeds.
Lunch: Mexican Salad (see recipe here) topped with Trader Joe’s Roasted Garlic salsa (lower sodium).
Dinner: (see first pic for salad) Mixed baby greens with carrots, cucumbers, 1 tbsp. raisins, grape tomatoes, red onions and 1/2 ounce raw Spanish peanuts. Baked sweet potato topped with black beans, red peppers and green onions.
Dessert: 1 cup fresh pineapple
