Vegan pizza recipe featuring Vegan Ricotta Cheese recipe by MyMommaToldMe.comHere’s a super-quick, super-healthy Vegan pizza that you can pull out for a quick-but-delicious lunch!  This quick recipe makes one personal-sized pizza!



  • 1 whole wheat pita
  • 1 cup Vegan Ricotta cheese
  • 1/2 cup of your favorite Vegan marinara or tomato basil sauce
  • toppings of your choice–I used mushrooms and roasted red pepper and eggplant spread (from Trader Joe’s)
  • Optional: Vegan Parmesan cheese

DIRECTIONS:  You can make this in the oven or microwave!  I’ve done it both ways and they are both good, but I think I prefer the crispy texture of the oven-baked version.  Preheat oven to 350 degrees.  Spread your pasta sauce over the pita and add large dollops of the vegan Ricotta on top.  Add your toppings and bake in the oven until the Ricotta just begins browning on top.  Sprinkle with vegan Parmesan and top with basil for garnish! 

Eat with a huge salad with veggies and balsamic vinegar and you’re on point for a satisfying vegan and nutritarian lunch or dinner!
