Here’s another ridiculously fast semi-homemade recipe featuring items from Trader Joe’s.  All you need to do is heat up, chop a few garnishes and serve!  These “tacos” make the perfect Summery, low-fat lunch and go perfectly with fresh fruit salad!

FALAFEL TACOS by Kristen

Ingredients:

  • 1 package Trader Joe’s Falafel (found in frozen section)
  • 1 container Trader Joe’s Tzatziki sauce
  • 1 package Trader Joe’s Corn and Wheat tortillas
  • Optional garnish: finely chopped jalepeno pepper and thinly sliced red onion

Directions:

  1. Heat up the frozen falafel (you’ll need 1 and 1/2 falafel per taco, they will be cut in half)–I heated mine in the toaster oven set at 350 degrees for 10 minutes (you can also microwave them if you’re in a real time crunch!). 
  2. While falafel are cooking, chop and slice your garnishes.
  3. Cut falafel in half after allowing them to cool down.
  4. Microwave the tortillas for 30 seconds–I heat mine in stacks of four tortillas.
  5. Assemble tacos: Spread a generous portion of the tzatziki sauce on the tortilla, layer with 3 cut pieces of falafel and garnish with peppers and onions!
