Cooked Vegetables

Here’s another awesome “Eat to Live” inspired dish that I concocted during my first week in the 6 week plan.  I’ve quickly learned tha tone of the most nutrient-dense vegetables on the planet does not have to be intimidating to cook with!  And Trader Joe’s pre-chopped organic Tuscan Kale bags in the salad section save you time and last forever in the fridge!

SIMPLE SAUTEED KALE:

Ingredients:

  • 2 cups chopped kale
  • 3/4 cup vegetable stock
  • 1/2 cup chopped Crimini mushrooms
  • 2 cloves garlic, minced
  • 1 teaspoon no-salt seasoning (like Frontier Salt-Free Organic All-Purpose Seasoning Blend)

Directions:

  1. In a pan cook kale with vegetable stock, garlic and seasoning on medium heat for 10 – 15 minutes or until well cooked.  You may need to add water if your vegetable stock dissolves during the lengthy cooking.
  2. Add mushrooms and cook for another 3 – 5 minutes.  Mushrooms should just be cooked through.  Remove from heat and serve hot!
