Join me as I blog my way through Dr. Furhman’s Eat to Live plan (again, yup I did this before and lost over 21 pounds)! My goal is to reach my ideal weight by doing the 6 week Eat to Live plan by Dr. Fuhrman until I reach that magic number! I will be posting what I eat each and every day (or as close as I can get) with pics! If you are currently on the plan we would love to hear from you–please comment and post pics below!
Breakfast: 1/2 cup steel cut oats, fresh strawberries, 1 cup un-sweetened almond milk, 1 tbsp. raw chia seeds
Lunch: (see first pic in post) I sauteed diced orange bell peppers in veggie broth and added leftover quinoa and red bean mixture (from Day 21), 1/2 can TJ’s organic black beans, 1/2 can TJ’s diced tomatoes and chilis and 1/2 cup TJ’s frozen organic roasted sweet corn. Served in a bowl with mixed greens, 1/2 Hass avocado and sprinkled with fresh green onions.
Dinner Salad: Mixed baby greens, sliced white mushrooms, grape tomatoes, sliced cucumbers, diced red peppers, 1/4th Hass avocado, raw pine nuts, raisins; dressed with balsamic vinegar.
Dinner: Green lentil stew: celery, onions and diced carrots sauteed in veggie broth, added 2 cups green lentils, seasoned with dried diced onions, garlic powder and dill. Topped with Trader Joe’s 21 No-Salt Seasoning Salute.

I do have a question about almond milk. How much can you have a day?

Hi Gina! I’m SO happy the blog has helped you on your journey!!! So, I don’t believe there is a limit set for almond milk but I usually aim for at least 1 cup a day for the calcium benefit!
Well here I go. Health is my goal so changing my diet or better yet the way I choose to eat for life is a priority. I’m 68 years old and not ready to go “down hill” yet.
