Join me as I blog my way through Dr. Furhman’s Eat to Live plan (again, yup I did this before and lost over 21 pounds)! My goal is to reach my ideal weight by doing the 6 week Eat to Live plan by Dr. Fuhrman until I reach that magic number! I will be posting what I eat each and every day (or as close as I can get) with pics! If you are currently on the plan we would love to hear from you–please comment and post pics below!
Breakfast: My go-to breakfast for the past few days: 1/2 cup Trader Joe’s organic steel-cut oatmeal, 1 cup TJ’s un-sweetened vanilla almond milk, fresh blueberries and strawberries, 1/2 tbsp. raw hemp seeds (see Day 18)
Lunch: (see pic above) mixed baby greens, grape tomatoes, cucumbers, diced red peppers, blueberries, raw almond slivers, 1/4th Hass avocado; dressed with balsamic vinegar. 1 can Annie’s minestrone soup (see Day 21 for more info), with a sprinkle of Trader Joe’s vegan cheese. Fresh strawberries for dessert!
Dinner: Mexican Meatball Salad: Trader Joe’s meatless meatballs, iceberg lettuce, grape tomatoes, 1/4th cup Wholly Guacamole, TJ’s fresh salsa (for salad dressing) and topped with fresh green onions.
A note about processed foods: As you can see, I do use processed foods while on this diet. I did not eat processed foods the first time I did the 6 week plan, so please take a look there if you are looking to avoid anything processed. This time around I am giving myself the felxability of using prepared foods because just to save time. My hope is as I get better at my healthy eating habit I will choose to eat less and less prepared foods (I’m also hoping I’ll spontaneously turn into one of those highly-organized mommas who does all her cooking on Sunday and stocks the fridge for the week–everyone needs something to aspire to!).
