Join me as I blog my way through Dr. Furhman’s Eat to Live plan (again, yup I did this before and lost over 21 pounds)! My goal is to reach my ideal weight by doing the 6 week Eat to Live plan by Dr. Fuhrman until I reach that magic number! I will be posting what I eat each and every day (or as close as I can get) with pics! If you are currently on the plan we would love to hear from you–please comment and post pics below!
Breakfast: More delicious fresh-cut grapefruits (see Day 17, breakfast)
Lunch: Mixed greens salad with sliced cucumbers, garbanzo beans, white mushrooms, grape tomatoes, raw almond slices, avocado and pomegranate seeds; dressed with balsamic vinegar. 2 corn tortilla tacos with leftover Tofu and Spinach “stir fry” (see Day 18, Lunch for recipe) topped with fresh red salsa, avocado and fresh cilantro.
Dinner: More Mexcian! Mexican Taco Salad: saute tofu in low-sodium veggie stock, add 1 can Trader Joe’s black beans (drained) add minced onion and garlic salt, cumin and Cayenne pepper. Layer on top of mixed greens and top with grape tomatoes, avocado, and fresh green onions. Instead of dressing use lower sodium red salsa.
Thoughts: You might have noticed I’ve been on a Mexican kick as of late. It’s easy to modify Mexican dishes to be made with no oil or added salt and it still tastes fresh and yummy. I overdid it with the avocado today, so I will try to be more mindful going forward.
