Day 18 What to eat on Dr Furhman eat to live nutritarian planJoin me as I blog my way through Dr. Furhman’s Eat to Live plan (again, yup I did this before and lost over 21 pounds)!  My goal is to reach my ideal weight by doing the 6 week Eat to Live plan by Dr. Fuhrman until I reach that magic number!  I will be posting what I eat each and every day (or as close as I can get) with pics!  If you are currently on the plan we would love to hear from you–please comment and post pics below!

Breakfast Day 18 on the Eat to Live Nutritarian Dr Fuhrman Plan MyMommaToldMe.comBreakfast: 1/2 cup Trader Joe’s organic steel-cut oatmeal, 1 cup TJ’s un-sweetened vanilla almond milk, fresh blueberries and strawberries, 1/2 tbsp. raw hemp seeds

Lunch salad on Dr Fuhrman Eat to Live Plan Nutritarian menu everything I eat MyMommaToldMe.comLunch:  Mixed baby greens salad with sliced cucumbers, grape tomatoes, pomegranate seeds, thinly sliced white onions and raw cashews; dressed with balsamic vinegar.  Asian tofu stir fry (see first pic in the post, above): cubed firm tofu sauteed in low-sodium veggie broth with minced onion, garlic powder, 1/2 tbsp. Liquid Aminos (got this at Whole Foods, it’s like a soy sauce alternative), finely chopped mushrooms, and frozen chopped spinach.  Then I sauteed the shredded carrots separately in the veggie stock and added some garlic powder.  Topped it all with a sprinkle of raw sesame seeds and fresh chopped green onions.

Dinner on Day 18 of Dr Furhmans Eat to Live Nutritarian Plan MyMommaToldMe.comDinner:  Roasted sweet potatoes, Crimini mushrooms and broccoli–I made this in my toaster oven and used my mister to continually mist the roasting veggies with veggie stock.  Also sprinkled with dried minced onion and garlic powder.  12 Trader Joe’s meatless meatballs (I used these in my vegan pizza on Day 16), and yes they are vegan!  I took too much time cultivating my roasted veggies that I skipped out on my salad–not my proudest Eat to Live moment I admit!

Thoughts:  This third week has been incredibly tough for me, as you can see from the past several days.  Part of the problem is that I’ve plateaued and even though I really shouldn’t, I weigh myself every day.  I think I’m going to go back to the once-a-week weigh-in method which worked well for me the first time I did this diet.  I’m proud that I haven’t given up but not getting those amazing daily results like I was during the first two weeks is certainly taking its toll!
