I had a hankering for some creamy goodness on my salad today, so I did a quick Google search for “vegan Caesar salad dressing.” After getting lost in a few recipes calling for “vegan Worcestershire sauce” (yeah, like I would ever find that at a local store!), I decided to trust my own intuition on how to get that classic Caesar taste without using any fishy bits! The result was amazingly Caesar-salady!! My hubby stole a leaf, plucked it in his mouth and his face perked up, “I would eat that!” was his final verdict. Um, YES, I did eat both servings by myself and relished every minute of it!
Even though this recipe is vegan it definitely does not imply that it is healthy! I’m still eating Nutritarian so I’m counting this as part of Dr. Fuhrman’s 100 calories from nutrient-vacant foods (yes, I’m referring to you Mr. Vegannaise)! The one bit of healthiness to be had is that I did not use salt in the dressing. I used some of my favorite Vegan Parmesan (it does have some sea salt in it but is mostly nutritional yest) so I’m happy to report that this Caesar dressing will kick your Ceasar dressing’s ass in the low-sodium department! Hope you love it as much as I did!

EASY VEGAN CAESAR SALAD (serves 2)
- 1 large head Romain lettuce, chopped (about 4 cups)
- 1/2 cup Vegannaise
- 1 1/2 tbsp. fresh lemon juice
- 1/2 tbsp. white vinegar
- 1 tsp. garlic powder
- 1 tbsp. capers, finely chopped
- black pepper to taste
- Vegan Parmesan cheese for garnish
Mix ingredients together with a whisk, adjusting as needed to get your preferred consistency. As prepared, the consistency will be more of a vinaigrette than a creamy ranch, for more creamy add more Vegannaise. Drizzle on top of chopped Romain lettuce and toss to coat. Sprinkle with Vegan Parmesan Cheese and fresh cracked pepper.
