Back To School Mickey Mouse Pancakes

Surprise your tot with this Mickey Mouse breakfast on his first day back to school! His smile will be worth the effort!

Show your little student how proud you are of his new school year and celebrate the first day of school by making your little one these special Mickey or Minnie Mouse pancakes!  Nothing really new here, mouse and other shape pancakes have been done for a long time, but it’s about that extra special care you take to show your little one how much you love him!  Make sure to snap a picture of your little Mouseketeer gobbling up his first-day-of-3rd-grade Mickey Mouse pancake!

Pancakes alone are not the pinnacle of a healthy breakfast, so trick your little guy into eating a healthier version by adding flax meal and almond meal.  You can also sub out regular milk for soy or almond milk.  And instead of maple syrup try a quick berry sauce or even yogurt to coat your cakes with!  The possibilities are endless 🙂



This is also a great recipe idea to do with your kids. She will love dressing up Minnie with delicious fruits!

  • I used “Trader Joe’s All-Purpose Pancake and Baking Mix” for these pancakes, but you can use any pancake mix you prefer!  And mix according to instructions on the box.  Mine called for 1 cup of water, 1 egg, and 1 3/4 cups of mix.
  • 2 tablespoons Flax Seed meal
  • 1 tablespoon Almond meal
  • Blue berries & Strawberries (for features)
  • Jam or Jelly (your preference)


  1. Mix ingredients according to box directions.
  2. Add flax meal and almond meal for added nutritional value!  You may need to add a little extra fluid to your mix to compensate for the added dry ingredients.
  3. Creating mouse shape: Make sure your non-stick pan or griddle is not too hot.  I put mine on medium heat and lowered it between pancakes.  Spoon a large ladle-full of batter first for the face and then pour two smaller spoon-fulls on each side for the ears.  The trick here is to pour about and inch and a half away from the face circle, otherwise you’ll end up with a big blob!  Also, make one mouse at a time, it’s WAY easier that way!  I also made a separate smaller circle for the mouse’s nose.
  4. Decorating:  Take a large strawberry to make Mickey’s bow tie, or a smaller strawberry to make Minnie’s hair bow.  Cut the green end off the berry and cut it down the middle, lengthwise.  Use two blueberries for the eyes.  Get a piping bag or sandwich bag with a small corner cut off and fill with your chosen jam or jelly to pipe the mouth.

    LOL!  Yes, they do have a bear-like quality to them!  You have no idea how many pancakes I went through before I finally got a decent one!  Yes, I agree the strawberry bows are super-cute, thank you!

    Definitely going to try these. My daughter LOVES pancakes and Mickey too. Nice touch with the berries, maybe she will be more willing to try them now. I have tried the Mickey Mouse look and can never get them right. I will follow your directions and see if I can finally accomplish it!
